Real Combi Steamers Do Eat Quiche!

A quiche is such a versatile dish. It's brilliant to have the basic concept in your foodie repertoire. They're tasty, nutritious, can be filled with left over bits and pieces and now can be cooked to seriously royal perfection using (you guessed it!) your Combi-Steam oven.

There's an Aussie coloquialism that "real men don't eat quiche". Well I beg to differ. Give one a go and see what the boys at your table think. Or, if you are the man of the house, hopefully you'll go one step further by not just eating it but cooking it too.

Here are two quiche recipes that will get you started, however use them as inspiration and don't stick to the recipe entirely! Feel free to fill yours with whatever you like! Think zucchini, sweet potato, goats cheese, herbs, fetta, spinach, mushies, tasty cheese, silverbeat, kale, pumpkin, bacon, asparagus, tomato, sweetcorn, chorizo...the list goes on and on. It's honestly up to you. If you keep the egg and pastry part the same the rest won't matter. And they are always one of the BEST ways to use up leftover, veg (pre cooked or uncooked) and cooked meats or small goods like bacon, ham, sausage, salami etc. Just chop everything up and throw it in. I haven’t really found anything that doesn't work. I often make one at the end of the week to use of any left over bits and pieces I have floating around.

Time to get quiche'ing ladies and gents!

serves 4-6

Ingredients:
1 ½ sheets frozen puff pastry (just thawed)
10XL eggs
125ml full cream milk or cream
1 ½ cups chopped raw or cooked veg, cooked meat or deli meats
¾ cup grated or crumbled cheese (your choice)
1 tbs thyme leaves s&p

Method:

  1. Spray a 23cm quiche/tart tin (with removable base) well with cooking spray.

  2. Select Combination Steam (Hot Air+Steaming) on your Combi-Steam. Variable Steam set to 30%. Set the temperature to 200°C. Allow to pre-heat.

  3. Gently press one sheet of pastry into the bottom and into the sides of the tin. Cut the remaining pastry piece into bits to fill the gaps around the edges. Press gently to join. Fold over the edges and press them down to the height of the tin or trim them off if you prefer.

  4. Sprinkle the meat, veg, cheese and herbs into the pastry base coating relatively evenly so each slice of quiche will have a nice mixture.. Season with a little s&p.

  5. Combine the eggs and milk or cream in a large mixing jug and whisk to combine. Don’t make it frothy or too airy - just gently mix together. (You could add a pinch of ground nutmeg here if you have some on hand!) Season very well with S&P.

  6. Pour the egg mix gently over the filling ingredients and give the tin a little "jiggle" to help it move in and around.

  7. Place your quiche into the Combi Steam. .

  8. Cook for 35-40 minutes - until puffed and golden brown.

  9. Remove and allow to cool for 10 minutes.

  10. Place a glass or small bowl, open side down, onto your bench. Sit the quiche tin on top and gently pull the sides of the tin to slide down carefully. Take the base off the top. Use a large slide to remove from the base of the tin and cool completely on a wire rack or slice and serve while warm.

Tips:

*In a V-ZUG or Wolf Combi-Steam you will have an option called BakeOMatic - Flan. It will automatically set the cooking time & temperature. Prepare the quiche. Select BakeOMatic - Flan. Select Medium Brown. Start the pre-heating. When the oven prompts you to add the food place the quiche into the oven. Press Start. Remove at the end of the automated cooking time when the timer alerts you.

*This can also be cooked in a traditional oven without steam. It’s especially good if you have a function that uses the base element of your oven. In my brand of choice we call it Pizza Plus. Just pre-heat to 200°C and cook for 35-40 minutes or until puffed and golden and filling is just set.
